Ho aderito con piacere ed entusiasmo al progetto di Gnammo. Mi piace far da mangiare e stare in compagnia, per cui mi é sembrata una bella idea.
Oltre alla cucina, un’altra mia passione è quell’arte. Per cui eccomi qui ad organizzare un menú all’insegna delle nature morte.
La citazione é quella di un pittore Cristoforo Munari nato a Reggio Emilia nel 1667 con il suo quadro “Vasellame di terracotta, zucca, verza e spalla di maiale, piatto con coltello”.
Il menú lo trovate qui e prevedeva che il piatto principale fosse una zuppa con gli ingredienti del quadro, facendo come fece il pittore nel suo quadro una composizione di verze, zucca e prosciutto.
La preparazione prevede di pulire la verza e tagliarla fine, facendola sbollentare in acqua fredda e poi salata al momento del bollore. Si prosegue tagliando la zucca e le patate a dadi piccoli.
Ho preso una bella pentola in terracotta in cui ho versato l’olio evo e fatto soffriggere il prosciutto crudo tagliato in pezzetti piccoli. Ho aggiunto la cipolla tagliata fine e lasciata a stufare. Dopo ho aggiunto man mano le patate, la verza sbollentata e infine la zucca.
Mescolate, controllare di sale e ricoprite di acqua. Ho lasciato cuocere a fuoco molto baso per piú di un’ora, fino a quando zucca e patate sono cotte senza essere disfatte. A parte in una padella antiaderente far scottare le fette di prosciutto fino a che non diventano croccanti.
Servire mettendo una fetta di prosciutto croccante nel piatto per ogni commensale.

1 kg. verza
1/2 kg. zucca
1 Cipolla
1 kg di Patate
100 gr. Prosciutto Crudo a fette
100 gr.prosciutto crudo a dadini
4 fette di pane
