Mi piace fare la pasta in casa, fa parte della serie Impastare che è un’azione per me rilassante e piacevole.
Raccontarvi come fare questa pasta è molto semplice, lungo è formare la pasta, che viene fatta un pezzo alla volta. E va via un pò di tempo…..molto tempo.
La farina a fontana sul tavolo, in centro le uova e un pò di sale. Si parte dal centro ad inglobare sempre più farina intaccando i lati, fino al completo inserimento della farina e poi si impasta per alcuni minuti. Finché uova e farina non siano amalgamati bene. Ma non tantissimo perché la pasta mi piace un pò ruvida in modo che accolga bene il sugo.
Una volta formata una palla, la si lascia riposare una mezz’ora.
Intanto si prende il mattarello o l’Imperial, la macchinetta per sfogliare la pasta e quando è il momento la si tira in sfoglia sottile (con la macchinetta tacca 5, la penultima). Da ogni sfoglia si tagliano delle strisce e poi dei quadrati. Li si fanno con il coltello oppure esiste una “caccavella” apposita, per chi vuol essere più regolare nel taglio.
Qui viene la parte più lunga e ripetitiva perché si usa un quadrato per volta e prendendolo per un angolo lo si arrotola su una bacchetta (rotonda) di legno, in modo che due angoli opposti si sovrappongano leggermente. La si fa rotolare sopra un “pettine” in modo che si formino le righe e nel contempo premendo leggermente, le due punte sovrapposte si sigillino e non si aprano in cottura. Anche in questo caso c’è un’altra caccavella apposita, ma io uso la paletta di legno per fare gli gnocchi. Oppure si può usare una forchetta.
Sfilate il garganello dalla bacchetta. Teneteli ben infarinati fino alla cottura e possibilmente non sovrapposti in modo da evitare che con il peso di altra pasta il foro si chiuda e i lati si attacchino.
Cuoceteli in acqua bollente, salata per pochi minuti e conditili a piacere.
