Un piatto che sa di vacanze di Natale per l’uso di un ingrediente rosso. La Melagrana da sempre considerata simbolo di fertilità e buon auspicio per un meraviglioso anno nuovo.
E’ astringente, antispastica, diuretica, vermifuga e tenifuga e secondo alcuni studiosi avrebbe anche un utile effetto sull’apparato cardiovascolare perché contribuisce a ridurre i livelli di zuccheri nel sangue (soprattutto contribuirebbe ad abbassare il colesterolo riducendone l’assorbimento). Il succo ha un elevato potere antiossidante e anticancerogeno.
E’ un periodo che sono particolarmente affascinante dal suo sapore dolce ma anche piacevolmente acidulo, agrumato.
Per questa ricetta, facile e relativamente veloce prendete i filetti di maiale, pulitili da tutti i grassi e grassini che trovate. Infarinateli e metteteli in una casseruola a rosolare con una noce di burro e un cucchiaio di olio extra vergine di oliva, girandoli spesso. Salate e aggiungete una spolverata di noce moscata.
Intanto pulite e con uno spremiagrumi, meglio un estrattore, ricavate il succo da una melagrana, conservando un po’ di grani per la decorazione.
Versate parte del succo sulla carne che sta cuocendo, rimestate, abbassate la fiamma e portate avanti la cottura aggiungendo succo in caso di necessità e rivoltando la carne spesso per evitare che si attacchi al fondo. Abbassate la fiamma e cuocete per una ventina di minuti, in funzione della grandezza del filetto.
A cottura ultimata affettate la carne e servitela con la salsa che si sarà formata e con qualche grano di Melagrana.
