Il prodotto classico della cucina tradizionale, puà essere presentato e ben si adatta una serata, ad un aperitivo veloce. E’ anche un piatto della cucina del riciclo, senza sprechi, attenta.
In una ciotola molto grande impastare la carne di manzo e la carne di maiale. Aggiungere il grana e le uova, ne ho segnate 10 ma dipende da quanto grandi sono. Amalgamare il tutto, il composto deve risultare omogeneo e ben amalgamato. aggiungere il sale, circa 7 grammi, ma dipende da quanto è saporito e stagionato il grana. Formare delle polpette tondo e passarle nel pane grattato, farle friggere in abbandonante olio di arachidi. Nel frattempo cuocere il sugo. In una padella soffriggere la cipolla in 4 cucchiai di olio evo, aggiungere la polpa e lasciare sobbollire fino a restrizione della salsa. Una volta pronto il sugo, immergere le polpette nel sugo e lasciarle in cottura a fuoco basso per 5 minuti. Servire in bicchierini o cucchiai da fingerfood. Le polpette sono un piatto della tradizione, ma ben si prestano ad essere servite in monoporzione per i più innovativi Fingerfood o più classicamente antipasti e stuzzichini.
