Preriscaldare il forno a 180°. Sbattere nella planetaria le uova con lo zucchero di canna fino ad ottenere un compoato soffice e spumoso, Unire a filo il latte e l’olio.
Miscelare la farina di riso con quello di grano saraceno, l’amido di mais, il lievito e la farina di mandorle. Unire le farine alle uova montate con lo zucchero ed amalgamare bene.
Versare il composto in pirottini “autoreggenti” 30×30, riempiendoli poco più della metà. Inserire in ognuno di essi una ciliegia, precedentemente lavata ed asciugata, con tanto di picciuolo. Cuocere per 15 minuti.
Ingredienti:150 gr. di farina di riso
50 gr. di farina di grano saraceno
50 gr.di farina di mandorle
3 cucchiai di amido di mais
130 gr. di zucchero di canna
3 uova
qualche goccia di limone
1 bustina di lievito
100 ml di latte
100 ml di olio
