Mi piace la pasta Brick, riesce a dare quel tocco di friabilità al piatto. Riesce anche a convertire il cibo in un cibo da strada, comodo da mangiare anche passeggiando o facendo il turista. Oppure lo converte, usando un termine più trendy, in un fingerfood.
La pasta brik o brick è la base per preparare dei fogli simili alla pasta fillo. Una sfoglia leggerissima utilizzata nella cucina araba, nordafricana, libanese.
I fogli di brik si trovano nei negozi di prodotti “africani” o anche in alcuni negozi di prodotti mediorientali, ma si possono anche produrre in casa.
Questa versione è ripiena di carne di manzo, ma la si può riempire anche di carne bianca o verdure, con un uguale ottimo risultato.
In una ciotola, ho messo il macinato di carne, ho aggiunto il formaggio grattugiato , la cipolla tritata, e il sale e un cucchiaino di erbe macinate. Ho rimescolato il tutto in modo che gli ingredienti si amalgamassero fra loro.
I fogli di pasta Brick che in questo caso ho comprato sono grandi, per cui ne ho usato per ogni bauletto uno tagliato a metà. Al centro ho messo un cucchiaio di carne macinata dandogli una forma di sigaro tozzo, poi ho piegato all’interno i bordi della pasta, in modo da non fare uscire in fase di cottura la carne o i liquidi e poi arrotolato su se stesso. La parte più consistente della pasta l’ho appoggiata sulla teglia in modo da tenere chiuso il bauletto, ma anche da assorbire meglio il succo della carne che si produce in cottura e la parte più sottile non risultasse troppo umida.

200 gr. di carne trita
un cucchiaio di grana padano macinato
una mezza cipolla tritata
un cucchiaino di erbe macinate (timo, alloro, salvia rosmarino, origano)
